What Are the Types of Mixers?

Each of the three types of mixer used in a commercial environment has its own unique advantages. The type of bread you need for your bakery depends on the amount of dough you produce, the type of product you bake and the size of your work area.

1. Horizontal mixers

This type of mixer is capable of producing the maximum volume of dough in the shortest possible time. It is configured so that as the dough is mixed, the next batch is fed into the machine continuously. Once the mixing process is complete, the dough also leaves the machine easily into the trough for easy transport.


One of the main disadvantages of the horizontal mixer is its inability to maintain a low dough temperature throughout the mixing process. The friction between the dough and the sides of the bin causes the temperature to rise, which is not ideal for certain types of yeast dough.

2. Spiral mixers

One of the most popular types of mixer, the spiral mixer is used in many different environments due to its flexibility. It mixes dough completely efficiently in a rotating bowl that moves around a spiral-shaped blade with little friction.


This option is available in a variety of sizes to suit many different target dough outputs. It uses less electricity than horizontal units and offers in terms of energy efficiency.


3. Planetary mixers

The planetary mixer is the most commonly used option in the home kitchen. The central mixing wand rotates around a fixed bowl. You can change the wand attachment as required to suit your blending goals.
